Ingredients Needed

1 lb. fettuccine noodles, cooked according to package directions*

1 rotisserie chicken, meat removed and torn into bite-sized pieces

1 12-oz. bag frozen broccoli florets

2 T. water

Creamy Sauce Ingredients:

1 cup butter

4 cloves fresh garlic, peeled and finely minced

8 oz. cream cheese, softened

1¼ cup half & half**

½ cup chicken broth

Sea salt and black pepper, to taste

1 cup Parmesan cheese, freshly grated

3 T. fresh parsley, chopped

Add freshly grated Parmesan cheese, to serve

*Tip #1: Prepare the fettuccine according to package directions. Make the sauce while you do this so that it is ready when you are done.

**Tip #2: It is important to remove the half and half from the refrigerator before you start this recipe. The time at room temperature will prevent it from curdling when you add it to the hot saucepan.

Lets get started:

1.   In a bowl, combine 2 tablespoons water with the broccoli florets. Microwave on high until crisp-tender, checking after two minutes and adjusting cooking times as needed. Drain the excess liquid after it’s done. Set aside.

2.   Set the pan with the chicken in it on top of medium heat. Add the butter and garlic to a large saucepan and bring to a simmer. Sauté for 1-2 minutes before adding cream cheese, half & half, and chicken stock. Continue cooking while stirring constantly till the cream cheese is completely melted.

3.  Reduce the heat to low and continue stirring for 15 minutes, or until the sauce thickens. Stir in freshly grated Parmesan cheese while removing from heat. Season with salt and black pepper, to taste.

4.   Stir in the Parmesan cheese and chopped parsley just before serving. Serve immediately with a large mixing bowl containing rotisserie chicken, steamed broccoli, and cooked fettuccine noodles. Pour the sauce over the top and gently toss until combined. Sprinkle with freshly grated Parmesan cheese and serve right away.
